Instructions

  1. Preheat oven to 425°F (220°C). Toss baby potatoes with olive oil, salt, pepper, and garlic powder. Spread on a baking sheet in a single layer and roast for 25-30 minutes until crispy.
  2. Season chicken breast with salt, pepper, and herbs. Grill or pan-sear over medium heat for about 6-7 minutes on each side until cooked through (165°F internal temperature). Let rest before slicing.
