  • 1 tsp olive oil
  • 1 tsp whole-grain mustard
  • 1 tsp garlic powder
  • 1 tsp dried herbs (parsley, thyme, or oregano)
  • Salt & pepper, to taste
  • Juice of lemon + lemon wedge for serving
  • 1 cup baby potatoes, halved
  • 1 cup cherry tomatoes
  • 1 cup broccoli florets

Instructions

  1. Preheat oven to 400°F (200°C). Toss halved baby potatoes with olive oil, garlic powder, salt, and pepper. Roast on a baking sheet for 25-30 minutes until golden.
  2. Season salmon with salt, pepper, mustard, herbs, and lemon juice. Heat a non-stick skillet over medium-high and sear salmon skin-side down for about 4 minutes per side until cooked through.
  3. Toss cherry tomatoes and broccoli in olive oil; roast with potatoes for the last 10-12 minutes or sauté until tender.
