  • ½ cup granulated sugar
  • 2 cups all-purpose flour
  • ¼ teaspoon salt
  • 3 cups fresh peaches, peeled and diced
  • ¼ cup granulated sugar (for filling)
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 2 large eggs
  • ¾ cup granulated sugar (for topping)
  • ½ cup sour cream or plain Greek yogurt
  • ¼ cup all-purpose flour (for topping)
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper or grease lightly.
  2. In a mixing bowl, cream together the softened butter and sugar until fluffy. Stir in flour and salt until crumbly. Press into the bottom of the prepared pan and bake for about 15 minutes.
  3. While the crust is baking, mix diced peaches with sugar, lemon juice, and cornstarch in another bowl.
  4. Spread the peach mixture over the baked crust.
  5. In a new bowl, whisk eggs, sugar, sour cream (or yogurt), flour, and vanilla until smooth. Pour this over the peach layer.
  6. Bake for an additional 35–40 minutes until set and golden brown. Let cool completely before cutting into squares.
