  • 1 teaspoon baking powder
  • 1 teaspoon baking soda

  • 1 3/4 cups whole wheat flour or spelt flour

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9" x 5" loaf pan by lining it with parchment paper.
  2. In a large mixing bowl, mash the ripe bananas until smooth. Add the grated zucchini, egg, olive oil, maple syrup, vanilla extract, cinnamon, baking powder, baking soda, and salt; mix until well combined.
  3. Gently fold in the flour until just combined; avoid overmixing.
