  • 1 cup Greek yogurt
  • 1/2 cup maple syrup or honey
  • 1/4 cup avocado oil or melted coconut oil
  • 1 3/4 cups spelt flour
  • 1 1/2 cups diced strawberries
  • 1/2 tsp cinnamon
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup quick or rolled oats
  • 1 tbsp spelt flour (for coating berries)
  • Cooking spray

Instructions

  1. Preheat oven to 375°F (190°C) and line a muffin tin with parchment paper liners.
  2. Dice the strawberries and set aside some for topping.
  3. In a mixing bowl, whisk together eggs, Greek yogurt, maple syrup (or honey), melted oil, vanilla extract, cinnamon, baking powder, baking soda, and salt until well combined.
  4. Stir in oats and spelt flour until just mixed; gently fold in the coated strawberries.
  5. Fill each muffin liner about three-quarters full and top with reserved strawberries.
  6. Bake for approximately 22 minutes or until a toothpick comes out clean.
