  • 4 cups butternut squash, diced and peeled
  • 1 lb ground turkey
  • 2 tbsp canola oil
  • 1 cup couscous
  • 3 cups swiss chard, finely chopped
  • Juice from 1 lemon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground cinnamon
  • 1/2 tbsp maple syrup
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 1/2 tsp canola oil
  • 1 1/2 cups red onion, minced
  • 1 tsp lemon pepper seasoning
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder

Instructions

  1. Preheat your oven to 400°F (200°C). In a bowl, combine diced butternut squash with canola oil, nutmeg, cinnamon, maple syrup, salt, and black pepper. Toss until evenly coated.
  2. Spread the squash on a baking sheet and roast for 25-30 minutes until tender.
  3. Meanwhile, prepare couscous by pouring boiling water over it in a bowl. Cover and let sit for about 5 minutes.
  4. In a skillet over medium heat, add remaining canola oil. Sauté minced red onion until translucent; then add ground turkey along with spices and cook until browned.
  5. Stir in chopped swiss chard until wilted, then mix in roasted butternut squash and couscous. Squeeze lemon juice over everything before serving.
