  • ¾ cup whole wheat or gluten-free flour
  • 1 ½ tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • 1 tsp baking powder
  • ¼ tsp salt
  • 1 tbsp coconut oil or unsalted butter, melted
  • 1 large egg, room temperature
  • 1 tsp almond extract
  • ¼ cup pure maple syrup
  • 6 tbsp unsweetened vanilla almond milk
  • ½ cup diced peaches

Instructions

  1. In a medium bowl, combine instant oats, flour, cinnamon, nutmeg, baking powder, and salt.
  2. In another bowl, mix melted coconut oil or butter with the egg and almond extract. Stir in the maple syrup and almond milk.
  3. Gradually add the dry ingredients to the wet mixture until just combined. Gently fold in diced peaches.
  4. Chill the dough in the refrigerator for 30 minutes.
  5. Preheat your oven to 325°F (163°C) and line a baking sheet with parchment paper.
  6. Drop rounded scoops of dough onto the prepared sheet and flatten slightly.
  7. Bake for 9-12 minutes until lightly golden on top. Let cool before serving.
