  • 8 ounces rotini noodles
  • 3/4 cup chopped English cucumber
  • 3/4 cup shredded carrot
  • 1 yellow bell pepper (chopped)
  • 1/2 cup diced red onion
  • 5 ounces sliced olives
  • 14 ounces cherry tomatoes (halved)
  • 34 ounces turkey pepperoni (quartered)
  • 6 ounces fresh mozzarella (cubed)
  • 2 ounces fresh basil (thinly sliced)
  • 1/3 cup light Caesar dressing
  • 1/3 cup light Greek dressing

Instructions

  1. Boil the rotini noodles in a large pot of salted water until al dente, following package instructions. Drain and rinse under cold water.
  2. While the pasta cools, chop all vegetables as listed in the ingredients.
  3. In a large mixing bowl, combine the cooled pasta, chopped vegetables, turkey pepperoni, mozzarella cheese, and basil.
  4. Drizzle with both dressings and season with salt and black pepper. Toss everything together until well combined.
  5. Transfer to a serving dish or large bowl and garnish with additional fresh basil if desired. Chill in the refrigerator until ready to serve.
