  • 500 g chicken breast
  • 1 cup broccoli florets
  • 1 cup green beans
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 2 tbsp vegetable oil
  • 2 cloves garlic
  • 2 tbsp soy sauce
  • 1 tbsp honey or maple syrup
  • 1 tsp sesame oil
  • Cooked mixed rice (brown, wild, and white rice blend)

Instructions

  1. Heat 1 tablespoon of vegetable oil in a skillet over medium-high heat. Add chicken pieces and cook until golden brown and fully cooked through, about 5-7 minutes. Remove chicken and set aside.
  2. In the same skillet, heat the remaining oil. Sauté minced garlic for about 30 seconds until fragrant.
  3. Add broccoli, green beans, and bell peppers; stir-fry for about 3-4 minutes until tender-crisp.
  4. Return chicken to the skillet and pour in soy sauce, honey or maple syrup, sesame oil, salt, and pepper. Stir well for another 2 minutes until heated through.
  5. Serve over warm mixed rice.
