  • 2 cups fresh pineapple chunks
  • 1 red bell pepper (sliced)
  • 1 yellow bell pepper (sliced)
  • 1 onion (sliced)
  • 3 cloves garlic (minced)
  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon sriracha sauce
  • 1 tablespoon olive oil
  • 1 teaspoon fresh ginger (grated)
  • salt and pepper (to taste)
  • 2 cups jasmine rice
  • 4 cups water
  • fresh cilantro (for garnish)

Instructions

  1. In a medium saucepan, combine jasmine rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes.
  2. Heat olive oil in a large skillet over medium-high heat. Season chicken with salt and pepper; cook until browned, about 6-8 minutes. Remove chicken from skillet.
  3. Add garlic and ginger to the skillet; sauté for 1 minute until fragrant. Add onions and bell peppers; cook until tender-crisp.
  4. In a bowl, whisk together soy sauce, honey, and sriracha; add to the skillet with vegetables.
  5. Return chicken to the skillet along with pineapple chunks; toss to coat and heat through for another 2-3 minutes.
  6. Serve over jasmine rice garnished with fresh cilantro.
