  • 1 cup chopped pecans (optional)
  • 1 cup sweetened shredded coconut (optional)
  • 1 package (8 oz) cream cheese, softened
  • 1 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 23 tbsp pineapple juice (reserved from the can)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, combine flour, sugar, baking soda, and salt. Add eggs, vanilla extract, and crushed pineapple with juice. Mix until well blended.
  3. Fold in optional chopped pecans and shredded coconut. Divide batter between prepared pans.
  4. Bake for 30-35 minutes or until a toothpick comes out clean. Allow cooling in pans for 10 minutes before transferring to wire racks.
  5. For the frosting, beat softened cream cheese and butter until smooth; gradually add powdered sugar and mix in vanilla extract and reserved pineapple juice.
  6. Assemble by spreading frosting between layers, on the top, and around the sides of the cake. Garnish as desired.
