  • 1 ½ pounds boneless skinless chicken breasts
  • 1 red bell pepper
  • 1 orange bell pepper
  • 1 cup pineapple chunks
  • 1 green bell pepper
  • 1 red onion
  • ⅓ cup ketchup
  • ⅓ cup soy sauce
  • ⅓ cup brown sugar
  • ¼ cup pineapple juice
  • 2 teaspoons sesame oil
  • 1 teaspoon minced fresh ginger
  • 3 cloves garlic
  • 1 teaspoon sriracha

Instructions

  1. Prepare the marinade by mixing ketchup, soy sauce, brown sugar, pineapple juice, sesame oil, ginger, garlic, and sriracha in a bowl.
  2. Reserve ½ cup of the marinade for later use. Marinate chicken cubes in the remaining mixture for at least 30 minutes (up to 4 hours).
  3. Preheat the grill to medium-high heat.
  4. Toss diced bell peppers, pineapple chunks, and onion with reserved marinade.
  5. Thread marinated chicken and veggies onto skewers alternately.
  6. Grill skewers for about 12 to 16 minutes until chicken is cooked through. Baste with remaining marinade while grilling.
