  • 2 lb boneless skinless chicken thighs (or breasts)
  • ¾ cup pineapple juice
  • ⅓ cup low-sodium soy sauce
  • 1 tbsp sesame oil
  • 2 cloves garlic (minced or 1 tsp garlic powder)
  • 1 tbsp fresh ginger (minced)
  • 3 tbsp brown sugar
  • ⅓ cup ketchup
  • 2 tsp tomato paste
  • ½ tsp red pepper flakes
  • ½ tsp ground nutmeg
  • ¼ tsp chili powder
  • 3 tbsp chopped fresh cilantro (for garnish)
  • 3 green onions (chopped for garnish)
  • Long grain white rice
  • Avocado slices

Instructions

  1. In a mixing bowl, combine pineapple juice, soy sauce, sesame oil, minced garlic, and ginger.
  2. Add brown sugar, ketchup, tomato paste, red pepper flakes, nutmeg, and chili powder; mix well.
  3. Place chicken in the marinade and let it sit for at least 15 minutes.
  4. Preheat your grill to medium-high heat or set your oven to 400°F (200°C). If using a grill, oil the grates lightly to prevent sticking.
  5. Remove chicken from marinade (reserve marinade) and place on grill or baking sheet if using an oven.
  6. Grill each side for about 6-7 minutes until fully cooked or bake in the oven for around 20 minutes.
  7. During cooking, brush reserved marinade on chicken for extra flavor.
  8. Once cooked through (internal temperature should be at least 165°F), remove from heat.
  9. Garnish with chopped cilantro and green onions before serving alongside rice and avocado slices.
