  • 1 salmon fillet (about 150g)
  • 1 tsp olive oil
  • tsp dried dill or parsley
  • Salt & pepper, to taste
  • 2 cups chopped romaine or mixed greens
  • 1 avocado, diced
  • 2 tbsp dried cranberries
  • 1 cup diced tomatoes
  • 1 cup thinly sliced red onion
  • 2 tbsp crumbled feta cheese
  • 1 tbsp chopped walnuts (optional, for crunch)
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar (or lemon juice)
  • tsp Dijon mustard

Instructions

  1. Season the salmon with olive oil, dill (or parsley), salt, and pepper. Grill or pan-sear over medium heat for about 4–5 minutes per side until cooked through. Let it rest for a few minutes before flaking it into chunks.
  2. In a large mixing bowl, combine greens, diced avocado, dried cranberries, diced tomatoes, thinly sliced red onion, crumbled feta cheese, and walnuts if using.
  3. In a small bowl, whisk together olive oil, balsamic vinegar (or lemon juice), Dijon mustard, salt, and pepper until well blended.
  4. Arrange the salad mixture on a plate. Top with flaked salmon and drizzle with dressing.
