  • 1 tsp olive oil
  • Dried dill or parsley (to taste)
  • Salt & pepper (to taste)
  • 2 cups chopped romaine or mixed greens
  • 1 avocado (diced)
  • 2 tbsp dried cranberries
  • 1 cup diced tomatoes
  • 1 cup thinly sliced red onion
  • 2 tbsp crumbled feta cheese
  • 1 tbsp chopped walnuts (optional)
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar (or lemon juice)
  • Dijon mustard (to taste)

Instructions

  1. Season the salmon fillet with olive oil, dill, salt, and pepper. Grill or pan-sear over medium heat for about 4-5 minutes per side until cooked through. Flake into chunks after resting.
  2. In a large bowl, combine mixed greens, avocado, cranberries, tomatoes, red onion, feta cheese, and optional walnuts.
  3. Whisk together olive oil, balsamic vinegar (or lemon juice), Dijon mustard, salt, and pepper in a separate bowl.
