  • 2 large chicken breasts
  • 1 tbsp olive oil
  • 1 tsp pink sea salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 1 tsp garlic powder
  • 1/2 tsp red pepper flakes
  • 1 Pineapple
  • 5 cups chopped romaine lettuce
  • 1/2 red onion
  • 1/2 cucumber
  • 1 cup cherry tomatoes
  • 1 avocado
  • 1/4 cup extra virgin olive oil
  • 1/4 cup lime juice
  • 2 tbsp honey
  • 1 tsp garlic powder
  • 1 tsp pink sea salt
  • 1/2 tsp black pepper
  • 1/2 tsp red pepper flakes

Instructions

  1. Slice the pineapple into rings and brush with olive oil.
  2. Season chicken breasts with olive oil, salt, pepper, thyme, garlic powder, and red pepper flakes.
  3. Preheat the grill to medium-high heat.
  4. Grill chicken for 7 minutes on each side; grill pineapple for 3–4 minutes on each side until caramelized.
  5. Chop romaine, slice onion and cucumber, halve cherry tomatoes, and slice avocado while grilling.
  6. Whisk together olive oil, lime juice, honey, garlic powder, salt, pepper, and red pepper flakes for the dressing.
  7. After grilling, slice chicken into strips and assemble the salad in a large bowl with romaine lettuce as the base.
  8. Top with all veggies and grilled chicken/pineapple before tossing with dressing.
