  • 100 ml lime juice (freshly squeezed)
  • 2 tablespoons cilantro (chopped)
  • 2 cloves garlic (crushed)
  • 1 teaspoon brown sugar
  • 3/4 teaspoon red chili flakes
  • 1/2 teaspoon ground cumin
  • 1 teaspoon salt
  • 4 boneless chicken thigh fillets (skin removed)
  • 1/2 yellow bell pepper (deseeded and sliced)
  • 1/2 red bell pepper (deseeded and sliced)
  • 1/2 onion (sliced)
  • 5 cups Romaine lettuce (washed and dried)
  • 2 avocados (sliced)
  • 1 pinch cilantro (extra to garnish)
  • 1 pinch sour cream (optional – to serve)

Instructions

  1. In a bowl, whisk together olive oil, lime juice, cilantro, garlic, brown sugar, red chili flakes, cumin, and salt to create the marinade.
  2. Pour half into a shallow dish and marinate chicken thighs for at least 2 hours. Refrigerate the other half for later use as dressing.
  3. Heat olive oil in a grill pan over medium-high heat and grill chicken for 6–7 minutes on each side until golden and fully cooked. Let rest before slicing.
  4. Cook sliced bell peppers and onion in the same pan until tender.
  5. In a large bowl, combine chopped Romaine lettuce, avocado slices, grilled chicken strips, cooked vegetables, and drizzle with reserved marinade before serving.
