  • 1/2 cup fresh cilantro
  • 1/2 cup fresh Italian parsley
  • 1 tablespoon fresh oregano
  • 1 small shallot
  • 2 cloves garlic
  • 1/2 jalapeño pepper
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon red apple vinegar
  • 1/2 cup olive oil
  • Salt and pepper

Instructions

  1. Prepare the chimichurri sauce by blending cilantro, parsley, oregano, shallot, garlic, and jalapeño in a food processor.
  2. Add lemon juice, red apple vinegar, olive oil, salt, and pepper; pulse until well combined.
  3. Marinate the chicken in half of the chimichurri sauce for at least 20 minutes (or up to 24 hours).
  4. Heat your grill to medium-high and cook the marinated chicken for about 5-6 minutes per side until fully cooked.
  5. Serve hot with remaining chimichurri sauce on the side.
