  • 1 large chicken breast
  • 2 medium sweet potatoes
  • 1 ripe avocado
  • 1 cup cherry tomatoes, halved
  • 1 tbsp olive oil
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • Salt & pepper to taste
  • Juice of 1/2 lime
  • 1/4 small red onion, thinly sliced

Instructions

  1. Preheat oven to 200C (400F) and line a baking sheet.
  2. Cut sweet potatoes into wedges and toss in olive oil, smoked paprika, and salt. Spread on the baking sheet and bake for 20-25 minutes until golden brown.
  3. Season chicken breast with olive oil, paprika, garlic powder, salt, and pepper. Grill over medium heat for 6-7 minutes per side until cooked through.
  4. In a bowl, mash avocado with lime juice, salt, and pepper to make guacamole.
  5. Combine cherry tomatoes, diced avocado, onion, olive oil, salt, and pepper in another bowl for a fresh salad.
  6. Assemble the bowl: layer sweet potato fries on one side; add sliced chicken next to them; include a scoop of guacamole and tomato-avocado salad.
