  • 68 medium onions
  • 23 tablespoons olive oil
  • 1 finely chopped onion
  • 56 grated garlic cloves
  • 2 pounds ground beef
  • 1 cup Arborio rice
  • Salt and freshly cracked black pepper to taste
  • 2 cups pureed canned or fresh tomatoes
  • 1/3 cup finely chopped fresh parsley
  • 1 teaspoon dried oregano
  • Balsamic vinegar

Instructions

  1. Prepare the onions by boiling them in salted water for 10–15 minutes until softened. Carefully separate layers while keeping them intact.
  2. In a skillet, heat olive oil and sauté chopped onion until softened. Add garlic and ground beef; cook until browned. Stir in rice and reserved broth, cooking until liquid is absorbed.
  3. Stuff each onion layer with the filling, then arrange seam-side down in a baking pan.
  4. Combine remaining tomato puree and balsamic vinegar, pouring over the onions. Cover and bake at 400°F (200°C) for about 45 minutes; uncover and bake for an additional 35–45 minutes until tender.
