  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 garlic clove, minced
  • 1 tsp dried oregano
  • Juice of one lemon
  • 1 small head romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • Cucumber, sliced
  • Red onion, thinly sliced
  • 1 cup feta cheese, cubed
  • For Tzatziki: 1 cup Greek yogurt
  • Grated cucumber, squeezed dry
  • Minced garlic
  • Fresh dill, chopped
  • Juice of lemon
  • Salt and pepper to taste

Instructions

  1. Marinate chicken in olive oil, minced garlic, oregano, lemon juice, salt, and pepper for at least 10 minutes.
  2. Grill or pan-sear chicken over medium-high heat for 4-5 minutes on each side until cooked through. Set aside to rest before slicing.
  3. Prepare tzatziki by combining Greek yogurt, grated cucumber (squeezed dry), minced garlic, chopped dill, lemon juice, salt, and pepper in a bowl.
