  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 garlic clove, minced
  • 1 tsp dried oregano
  • Juice of lemon
  • Salt & pepper to taste
  • 1 small head romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1 red onion, thinly sliced
  • 1 cup feta cheese, cubed
  • 1 cup Greek yogurt
  • 1 cucumber, grated & squeezed dry
  • 1 garlic clove, minced
  • 1 tbsp fresh dill, chopped
  • Juice of lemon
  • Salt & pepper to taste
  • Fresh dill & mint (optional)

Instructions

  1. 1. Marinate chicken in olive oil, minced garlic, oregano, lemon juice, salt, and pepper for at least 30 minutes.
  2. 2. Grill or pan-cook chicken over medium-high heat for 4-5 minutes per side until cooked through. Let rest before slicing.
  3. 3. For tzatziki, mix Greek yogurt, grated cucumber (squeezed dry), minced garlic, dill, lemon juice, salt, and pepper until smooth.
  4. 4. Assemble bowls with chopped lettuce, cherry tomatoes, cucumber slices, red onion, feta cheese, and sliced chicken.
  5. 5. Top with tzatziki and garnish with dill or mint if desired.
