20 Medjool dates
250 g diced turkey
40 g chopped walnuts
1 tbsp finely diced rosemary
1 tbsp maple syrup
1 tbsp brown sugar
250 g goat cheese
Zest of 1 orange
1 tbsp olive oil
Salt and pepper to taste
Instructions
Preheat your oven to 180 degrees C (350 degrees F).
Slice the dates lengthwise and remove the seeds without splitting them in half. Set aside.
In a cold pan, add the diced turkey and cook on high heat for about 3 minutes, stirring occasionally. Add walnuts, two-thirds of the rosemary, maple syrup, and brown sugar; cook for another 5 minutes until crispy.
In a food processor, blend goat cheese with orange zest, olive oil, salt, and pepper until smooth.
Stuff each date with about a teaspoon of goat cheese mixture. Arrange on a baking tray and top with the turkey mixture.
Bake for approximately 10 minutes until heated through. Garnish with remaining rosemary and orange zest before serving.
