  • 20 Medjool dates
  • 250 g diced turkey
  • 40 g chopped walnuts
  • 1 tbsp finely diced rosemary
  • 1 tbsp maple syrup
  • 1 tbsp brown sugar
  • 250 g goat cheese
  • Zest of 1 orange
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 180 degrees C (350 degrees F).
  2. Slice the dates lengthwise and remove the seeds without splitting them in half. Set aside.
  3. In a cold pan, add the diced turkey and cook on high heat for about 3 minutes, stirring occasionally. Add walnuts, two-thirds of the rosemary, maple syrup, and brown sugar; cook for another 5 minutes until crispy.
  4. In a food processor, blend goat cheese with orange zest, olive oil, salt, and pepper until smooth.
  5. Stuff each date with about a teaspoon of goat cheese mixture. Arrange on a baking tray and top with the turkey mixture.
  6. Bake for approximately 10 minutes until heated through. Garnish with remaining rosemary and orange zest before serving.
