  • 2 tablespoons molasses
  • 2-inch piece of fresh ginger (thinly sliced)
  • 2 cinnamon sticks
  • 1 teaspoon pure vanilla extract
  • Ice
  • 2 ounces (1/4 cup) lemon juice
  • 1 ounce (2 tablespoons) strong brewed coffee
  • 1 ounce (2 tablespoons) gingerbread syrup (or more, to taste)
  • 12 ounces (24 tablespoons) heavy cream
  • Cinnamon and sugar mixture for rimming the glass
  • Mini gingerbread cookies
  • Ground cinnamon or nutmeg for dusting

Instructions

  1. Prepare the Gingerbread Syrup: In a saucepan, combine water, honey or maple syrup, molasses, sliced ginger, cinnamon sticks, and vanilla extract. Simmer over medium heat for 5 minutes. Cool and strain.
  2. Mix Your Cocktail: Fill a cocktail shaker with ice. Add lemon juice, strong brewed coffee, gingerbread syrup to taste, and heavy cream. Shake well until chilled.
  3. Serve: Rim a glass with cinnamon-sugar by wetting the rim first. Pour the cocktail over ice in the prepared glass. Garnish with mini gingerbread cookies and dust with cinnamon or nutmeg.
