  • 15g fresh ginger
  • 1 red chili
  • 1 tbsp curry powder
  • 350ml water
  • Fresh coriander and mint

  1. Marinate the chicken thighs by combining grated garlic, lime juice, and salt in a bowl. Let it sit for at least 30 minutes.
  2. Prepare the ginger, garlic, and chili by finely slicing them.
  3. Cook the marinated chicken in a frying pan over medium heat until charred and cooked through (about 10-15 minutes). Remove and let rest.
  4. In the same pan, sauté ginger, garlic, and chili for about 3 minutes before adding curry powder and water. Simmer for 5 minutes.
  5. Create a herb salad using fresh coriander, mint leaves, and finely sliced red onion.
