  • 2 tsp active dry yeast

  • 3 cups all-purpose flour
  • 1 cup ground almonds
  • 1 tsp special occasion spice mix
  • 3/4 cup softened butter
  • 2 eggs (room temperature)
  • 1 tsp vanilla extract
  • 3.5 oz candied citrus peel
  • 1 cup powdered sugar (for topping)

Instructions

  1. Soak the raisins and currants in boiling water until plump, then drain.
  2. Activate yeast by combining lukewarm milk, yeast, and a tablespoon of sugar; let sit until frothy.
  3. In a mixing bowl, combine flour, ground almonds, special occasion spices, and remaining sugar.
  4. Mix in the activated yeast mixture, softened butter, vanilla extract, and eggs until combined.
  5. Fold in the soaked fruit and candied citrus peel.
  6. Knead the dough until smooth; let rise covered in a warm place for 1-2 hours.
  7. Preheat oven to 350°F (180°C) and line a baking sheet with parchment paper.
  8. Roll dough into small balls (about 2 oz each) and space them on the baking sheet.
  9. Bake for 15-20 minutes until golden brown; cool on a wire rack.
  10. While warm, roll cookies in powdered sugar before serving.
