  • 3 tbsp dill
  • 1.5 tbsp lemon juice
  • 1/4 tsp salt
  • 1 small cucumber (grated and squeezed dry)
  • 2 tbsp dill
  • 1 tbsp mint
  • 1.25 cups yogurt
  • 2.5 tbsp lemon juice
  • 4 cloves garlic (minced)
  • 3/4 tsp salt
  • 1/2 tsp lemon zest

Instructions

  1. Marinate the chicken by mixing lemon juice, olive oil, yogurt, and spices in a bowl. Add chicken chunks and coat evenly. Refrigerate for at least 30 minutes.
  2. Rinse rice under cold water until clear. Cook according to package instructions or in a rice cooker.
  3. Preheat oven to 400°F (200°C). Spread marinated chicken on a baking sheet and roast for 25-30 minutes until cooked through.
  4. Dice fresh vegetables while chicken is roasting.
  5. Prepare tzatziki sauce by combining grated cucumber with yogurt, dill, mint, garlic, lemon juice, salt, and lemon zest.
