  • 450 g chicken breast
  • 200 g mushrooms
  • 1 red bell pepper
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1 tsp dried Italian herbs
  • 1 tsp paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 200C (400F).
  2. In a mixing bowl, toss halved baby potatoes with olive oil, garlic powder, oregano, salt, and pepper. Spread on a baking sheet in a single layer and roast for 20-25 minutes until golden brown.
  3. While the potatoes roast, heat olive oil in a skillet over medium-high heat. Add cubed chicken breast seasoned with salt, pepper, paprika, and Italian herbs. Cook until golden brown.
  4. Add minced garlic, sliced mushrooms, and diced red bell pepper to the skillet. Continue cooking for an additional 5-6 minutes until vegetables are tender.
  5. Serve garnished with fresh parsley alongside crispy roasted potatoes.
