  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 tsp garlic powder
  • Salt & pepper
  • Fresh parsley, chopped (for garnish)
  • 1 cup mushrooms, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 small onion, sliced
  • 1 clove garlic, minced
  • 3 medium potatoes, peeled and cubed
  • 2 tbsp butter
  • ½ cup milk

Instructions

  1. Boil the potatoes in salted water until tender (about 15 minutes). Drain and mash with butter and milk; season with salt and pepper.
  2. In a skillet, heat olive oil and butter over medium heat. Season chicken with garlic powder, salt, and pepper; cook for 6-8 minutes per side until golden.
  3. Remove chicken and keep warm. In the same skillet, sauté onions until translucent, then add bell peppers, mushrooms, and minced garlic; cook until softened (about 5-7 minutes).
  4. Serve by placing mashed potatoes on each plate, topped with sliced chicken and sautéed veggies. Garnish with fresh parsley.
