  • 1/2 cup packed light brown sugar
  • 1 egg

  • 1/2 teaspoon almond extract
  • 8 ounces low-fat cream cheese
  • 23 tablespoons maple syrup or honey
  • Fresh fruit (strawberries, blueberries, raspberries, etc.)
  • Optional: Honey for drizzling

Instructions

  1. Preheat oven to 350°F and grease your pan.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a large mixing bowl, beat together butter and brown sugar until fluffy. Add egg and extracts; mix well.
  4. Gradually incorporate the dry ingredients until just combined.
  5. Press dough into the prepared pan, poke holes to prevent bubbling, and bake for 15-18 minutes until golden.
  6. Let cool for about 20 minutes before spreading with frosting made from beaten cream cheese, maple syrup or honey, vanilla extract, and salt.
  7. Top with fresh fruit as desired and drizzle with honey if using.
