  1. Rinse the peaches under cold water and pat dry. Cut each peach in half, remove the pit, and peel the skin off before cutting into quarters.
  2. Measure your peeled peaches accurately and gather all ingredients.
  3. In a large jam pan, combine the quartered peaches, sugar, lemon juice, and squeezed lemon halves.
  4. Stir well and bring to a rolling boil over medium heat; then reduce to simmer for 40-50 minutes until glossy.
  5. Remove lemon halves and blend the mixture to your desired consistency.
  6. Test for setting by dropping hot jam on an ice-cold plate; if it doesn't run when tilted, it's ready.
  7. Fill sterilized jars with hot jam, leaving half an inch at the top, secure lids tightly, then turn jars upside down for several hours before storing.
