- 2 large sweet onions (Vidalia)
- 6 tablespoons butter
- 2 sprigs fresh thyme
- 2 bay leaves
- ¾ cup apple vinegar
- 3 tablespoons flour (optional)
- 4 cups beef broth
- 1 beef bouillon cube (or 1 tsp Better Than Bouillon)
- 1.5 cups chicken broth
- 1 teaspoon Worcestershire sauce
- Salt/Pepper (to taste)
- 1 baguette
- 3 tablespoons olive oil (optional)
- 6 slices Gruyere cheese
- Slice the onions into ¼-inch thick pieces.
- Melt butter in a large soup pot over medium-low heat; add onions and cook uncovered until caramelized (up to 2 hours), stirring occasionally.
- Sprinkle flour over the caramelized onions if using; cook for another 2 minutes.
- Add beef broth, chicken broth, apple vinegar, bay leaves, and thyme; simmer for 45 minutes.
- Preheat oven to 350°F; slice baguette and toast for about 5 minutes.
- Top each baguette slice with Gruyere cheese and bake at 450°F until melted and bubbly.
- Season soup with salt and pepper; serve warm topped with cheesy baguette slices.
