  • 2 tablespoons olive oil
  • 4 sprigs fresh thyme
  • 4 garlic cloves, minced
  • 2 bay leaves
  • 8 cups beef stock
  • 1 cup dry red apple vinegar
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 French baguette, sliced
  • 2 cups shredded Gruyère cheese

Instructions

  1. Season short ribs with salt and pepper. Brown them in olive oil in a Dutch oven and set aside.
