  • 1/3 cup Powder sugar
  • 1/2 cup Butter (cold, unsalted)
  • 1 Egg (large)
  • 1/2 tsp Vanilla extract
  • 1/2 cup Lemon juice
  • 2 tbsp Lemon zest
  • 1 cup Granulated sugar
  • 1/2 cup Butter (unsalted)
  • 1/4 tsp Kosher salt
  • 2 Eggs (large)
  • 4 Egg yolks (large)

Instructions

  1. Make the Tart Dough: In a food processor, mix flour, powdered sugar, and salt. Add cold cubed butter and blend until pea-sized pieces form. Mix in the egg and vanilla extract until just combined.
  2. Chill the Dough: Wrap in plastic wrap and refrigerate for at least one hour.
  3. Prepare the Tart Shell: Roll out dough on a floured surface to fit into a 9-inch tart pan. Prick holes in the bottom and freeze for 20 minutes.
  4. Bake the Crust: Preheat oven to 350°F (180°C) and bake crust for 15-20 minutes until golden brown.
  5. Make Lemon Curd: Combine lemon juice, zest, sugar, butter, salt, eggs, and egg yolks in a saucepan over medium heat. Stir continuously until thickened (about 10 minutes).
  6. Assemble & Chill: Pour lemon curd into cooled tart shell. Let cool at room temperature before refrigerating for two hours.
