  • 4 cups edible flower blossoms
  • 4 cups water
  • 2 tablespoons lemon juice
  • 1 to 4 cups sugar (adjust based on sweetness preference)
  • 1 box powdered pectin (1.75 oz)

Instructions

  1. Prepare the blossoms by separating them from their stems and removing any green parts.
  2. Pour boiling water over the flowers and let steep for about 10 minutes to create a floral infusion.
  3. Strain the mixture into a large pot using a strainer or cheesecloth.
  4. Add lemon juice and bring to a boil; then stir in powdered pectin until dissolved.
  5. Add sugar while stirring, and boil again for one minute before ladling into jars.
  6. If canning, process jars in a water bath for 10 minutes; otherwise, cool on the counter before storing.
