  • 2/3 cup sugar

  • 1 tsp almond extract

Instructions

  1. Cream together the sugar and butter until fluffy using a stand mixer or hand mixer on medium-high speed for about 5-6 minutes.
  2. Add the egg and almond extract; mix on medium speed for about one minute until combined.
  3. In a separate bowl, whisk flour and salt together, then gradually add to the butter mixture on low speed until a dough forms.
  4. Roll dough into 1-ounce balls and place two inches apart on a parchment-lined baking sheet.
  5. Use the bottom of a glass to flatten balls slightly, then make flower petal indents using thumbprints.
  6. Fill each indent with about one teaspoon of jam, adding a small dot of dough in the center if desired.
  7. Chill cookies in the refrigerator for 15-20 minutes before baking.
  8. Preheat oven to 375°F (190°C) and bake for approximately 15 minutes or until edges are lightly browned.
