  • 2 medium oranges (about 400 g), boiled and pureed
  • 150 g almond meal
  • 100 g shelled pistachios, finely ground
  • 6 large eggs
  • 200 g granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon fine sea salt

Instructions

  1. Preheat your oven to 170°C (340°F). Line a springform pan base with parchment paper and grease the sides.
  2. Boil the oranges in water for 60 minutes, then cool, remove seeds, and puree.
  3. Whisk eggs and sugar until pale; add orange puree.
  4. In another bowl, mix almond meal, ground pistachios, baking powder, and salt. Fold dry ingredients into wet until just combined.
  5. Pour batter into the prepared pan and smooth the top.
  6. Bake for 50 to 60 minutes until set; check doneness with a skewer.
  7. Cool for 10 minutes before removing from pan; transfer to wire rack.
