  • 4 boneless, skinless chicken breasts (680g)
  • 4 cloves fresh garlic, minced
  • 2 cups broccoli florets (150g)
  • 3 cups baby spinach (90g)
  • 2 tbsp olive oil (30ml)
  • 2 tbsp low-sodium soy sauce (30ml)
  • Juice of 1 lemon
  • 1 tbsp toasted sesame seeds (9g)

Instructions

  1. Wash broccoli and spinach thoroughly. Cut broccoli into bite-sized florets and pat dry the chicken breasts.
  2. In a bowl, mix olive oil, minced garlic, soy sauce, and lemon juice. Add chicken breasts to the marinade and let soak for at least 15 minutes.
  3. Heat a large skillet over medium heat. Add marinated chicken breasts and cook for about 6 minutes on each side until golden brown and cooked through.
  4. Toss in broccoli florets first; sauté for about 3 minutes until slightly softened, then add fresh spinach.
  5. Stir gently for another couple of minutes until spinach wilts down beautifully.
  6. Transfer to plates or a serving platter, sprinkling toasted sesame seeds on top.
