  • 3/4 cup granulated sugar
  • 1/4 cup water
  • 14 oz can sweetened condensed milk
  • 12 oz can evaporated milk
  • 1 3/4 cups heavy whipping cream
  • 1 1/2 Tbsp vanilla extract
  • 5 large eggs (room temperature)
  • 1/4 tsp fine sea salt

Instructions

  1. Preheat your oven to 350°F and set the oven rack in the middle position.
  2. In a medium saucepan, combine sugar and water to create caramel. Bring to a boil over medium-high heat without stirring until golden amber, then pour into a non-stick cake pan.
  3. Blend together sweetened condensed milk, evaporated milk, heavy cream, vanilla extract, eggs, and salt until smooth. Strain if desired and pour over the caramel.
  4. Cover the cake pan with aluminum foil and place it in a large roasting pan filled with hot water halfway up the sides of the cake pan.
  5. Bake for 70-80 minutes until the center is slightly jiggly but firm. Let cool at room temperature before refrigerating for at least 6 hours or overnight.
  6. To serve, run a knife around the edge of the pan and invert onto a platter. Garnish with berries if desired.
