  • 1/2 cup unsalted shelled pistachios
  • 1 egg
  • 1/4 cup sugar
  • 2 tbsp cornstarch
  • 1 cup milk
  • 1/4 tsp salt
  • 1/2 tsp vanilla
  • 1 tbsp unsalted butter
  • 2 tbsp pistachio paste
  • 1 cup powdered sugar
  • 34 tbsp milk (more if needed)
  • A few drops of green food color

Instructions

  1. Prepare croissants as detailed in part 1.
  2. Blanch pistachios for 2 minutes, pat dry, and remove skins. Blend until smooth.
  3. In a saucepan, heat milk and vanilla until boiling. Mix egg, sugar, salt, and cornstarch separately.
  4. Gradually combine the hot milk with the egg mixture to temper it, then return to heat and stir until thickened into custard.
  5. Mix in butter and pistachio paste; blend until smooth and refrigerate.
  6. Prepare icing by mixing powdered sugar with milk until runny.
  7. Fill croissants using a piping bag fitted with a Bismark tip.
  8. Drizzle icing over filled croissants and top with chopped pistachios before serving.
