  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/3 cup brewed espresso
  • 3 large eggs
  • 1/2 cup heavy cream
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine Oreo crumbs and melted butter in a bowl; press into a 9-inch springform pan.
  3. Bake the crust for 10 minutes, then cool and reduce the oven temperature to 325°F (160°C).
  4. In a mixing bowl, beat softened cream cheese until smooth. Add sugar, vanilla, brewed espresso, and eggs; mix until combined.
  5. Pour the filling over the cooled crust and smooth the top.
  6. Place the springform pan in a water bath and bake for 65–85 minutes until edges are set but center is slightly jiggly.
  7. Turn off the oven and cool the cheesecake gradually for one hour.
  8. Prepare ganache by pouring hot cream over chocolate chips; stir until smooth.
  9. Once cooled, pour ganache over cheesecake and refrigerate for at least four hours or overnight before serving.
