  • 23 small garlic cloves
  • 3 tablespoons extra virgin olive oil
  • 34 tablespoons cider vinegar
  • Celtic salt to taste
  • Fresh parsley (optional)
  • Maple syrup (optional)

Instructions

  1. Preheat oven to 185℃/365℉.
  2. Wash and place peppers on a baking tray in a single layer.
  3. Roast for 30-35 minutes until tender and blistered. Let rest covered for 10-15 minutes.
  4. Peel the skin off the cooled peppers and cut them into strips.
  5. In a bowl, mix olive oil, cider vinegar, minced garlic, salt, parsley, and maple syrup (if using). Whisk until combined.
  6. Drizzle the vinaigrette over the roasted pepper strips and serve.
