  • 2 carrots, diced
  • 2 stalks celery, diced

  • 1 (8-ounce) can tomato sauce
  • 2 (14-ounce) cans chicken broth
  • Freshly ground black pepper, to taste
  • 2 tablespoons dried parsley
  • 1 tablespoon dried basil leaves
  • 2 (15-ounce) cans cannellini beans, drained and rinsed
  • 3 cups ditalini pasta

Instructions

  1. In a large saucepan, heat olive oil over medium heat. Add the diced carrots, celery, and onion; sauté until softened. Stir in chopped garlic and sauté briefly until fragrant.
  2. Pour in the tomato sauce and chicken broth. Season with black pepper, parsley, and basil. Let the mixture simmer for about 20 minutes to meld flavors.
  3. In a separate pot, bring salted water to a boil and cook ditalini pasta for about 8 minutes until al dente; drain well.
  4. Add drained cannellini beans to the soup mixture; simmer for a few more minutes. Stir in the cooked pasta until well combined.
