  • 1/2 teaspoon baking soda
  • 1 cup chopped candied pineapple
  • 1 cup chopped candied red cherries
  • 1 cup chopped candied green cherries
  • 1 cup roughly chopped pecans

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Mix in the egg along with the vanilla, almond, and lemon essences until well combined.
  4. In another bowl, whisk together the flour, salt, and baking soda; gradually combine with the wet mixture without over-mixing.
  5. Gently fold in the chopped candied fruits and nuts until evenly distributed.
  6. Drop rounded tablespoons of dough onto a parchment-lined baking sheet, spacing them apart.
  7. Bake for about 20 minutes or until the edges are lightly golden.
  8. Allow to cool on the baking sheet briefly before transferring to a wire rack to cool completely.
