  • 3 cups boneless, skinless chicken breasts (cooked and shredded)
  • 1 can (15 oz) canned white beans (drained)
  • 1 cup diced onion
  • 4 cloves garlic (minced)
  • 1 cup canned diced green chiles
  • 4 cups low-sodium chicken broth
  • 2 tsp ground cumin
  • 1 tbsp chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Dice the onion and mince the garlic.
  2. In a large pot over medium heat, add oil and sauté the onion for about 5 minutes until translucent. Add garlic and sauté for another minute.
  3. Add shredded chicken, cumin, chili powder, salt, pepper, green chiles, and enough chicken broth to cover everything (about 4 cups). Bring to a boil.
  4. Reduce heat to low and simmer uncovered for about 20 minutes, stirring occasionally.
  5. Taste and adjust seasoning as needed. Serve hot topped with fresh cilantro.
