  • 2 lb ground/minced beef
  • 1 onion (diced)
  • 1 bell pepper (diced)
  • 2 cloves garlic (minced)
  • 4 tablespoon keto taco seasoning
  • 2 tbsp tomato paste
  • 2 medium eggs
  • 1½ cups shredded cheese
  • ½ cup heavy whipping cream
  • 1 jalapeno (sliced) – optional

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. In a large skillet over high heat, sauté diced onion, bell pepper, minced garlic, and ground beef until browned.
  3. Mix in keto taco seasoning and tomato paste; combine well before transferring the mixture to a casserole pan.
  4. In a mixing bowl, whisk together eggs and heavy cream; stir in half of the shredded cheese. Pour over the beef mixture.
  5. Top with remaining cheese and optional sliced jalapeños.
  6. Bake uncovered on the top rack for 15-17 minutes until set. Let rest for 5 minutes before serving.
