  • 1 large egg
  • 1/2 cup unsalted sweet cream butter
  • 3 cups Easter sprinkles
  • For the Vanilla Frosting: 1/2 cup unsalted sweet cream butter (softened), 2 1/2 cups powdered sugar, 2 tablespoons heavy whipping cream, pink gel food coloring

Instructions

  1. Preheat your oven to 350°F and line two cookie sheets with parchment paper.
  2. In a stand mixer, combine the cake mix, egg, and butter until smooth dough forms; fold in 1 cup of Easter sprinkles.
  3. Use a small cookie scoop to portion out dough balls; roll each in remaining sprinkles before placing on the cookie sheets.
  4. Bake for 10–12 minutes, then cool completely on racks.
  5. For frosting, beat softened butter, powdered sugar, heavy whipping cream, and pink gel food coloring until creamy.
  6. Pipe frosting onto one half of each whoopie pie and sandwich with another half.
