  • 4 pieces uncooked Turkey Turkey Bacon, diced
  • 1 small white onion, finely diced
  • 1 jalapeno, stemmed, seeded and diced
  • 4 garlic cloves, minced
  • 1 (12-ounce) bottle dark Mexican beef broth
  • 4 (15-ounce) cans pinto beans, rinsed and drained
  • 1 Tablespoon brown sugar
  • 1 teaspoon dried oregano
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 1/2 teaspoon cumin
  • 1 Tablespoon fresh lime juice
  • 1/4 cup chopped fresh cilantro

Instructions

  1. In a large sauté pan over medium-high heat, cook the diced Turkey Turkey Bacon until crispy. Remove and set aside.
  2. Sauté the onion and jalapeno in the reserved bacon grease for 5 minutes until soft. Add garlic and sauté for 1-2 more minutes.
  3. Stir in beef broth, rinsed pinto beans, brown sugar, oregano, chili powder, salt, and cumin. Bring to a simmer; reduce heat to medium-low and cook uncovered for about 15 minutes.
  4. Finish by stirring in the reserved turkey bacon and fresh lime juice before serving topped with chopped cilantro.
