  • 1/3 cup pineapple juice
  • 2 tablespoons honey or brown sugar
  • 1 tablespoon rice vinegar or apple cider vinegar
  • 1 teaspoon cornstarch + 1 tablespoon water (for thickening the sauce)
  • 1 1/2 cups cooked rice (white, brown, or jasmine)
  • 1 cup pineapple chunks (fresh or canned, drained)
  • 1/2 red bell pepper, diced
  • 1/4 cup green onions, chopped

Instructions

  1. Heat olive oil or sesame oil in a large skillet over medium-high heat. Add cubed chicken and cook until browned and fully cooked (about 5–7 minutes). Stir in minced garlic and sauté for an additional 30 seconds.
  2. In a small bowl, whisk together soy sauce, pineapple juice, honey (or brown sugar), and vinegar. Pour this mixture into the skillet with the chicken and bring to a simmer.
  3. Combine cornstarch and water in another small bowl and mix well. Stir this into the skillet to thicken the sauce for about 2–3 minutes until desired consistency is reached.
  4. Add pineapple chunks, diced red bell pepper, and chopped green onions to the skillet. Heat everything through for about 2 minutes until vegetables are slightly softened but still vibrant.
  5. Serve the Pineapple Chicken over warm cooked rice. Garnish with sesame seeds, extra green onions, or crushed red pepper flakes if desired.
