  • 2 lbs bone-in chicken pieces (thighs and drumsticks)
  • 1.5 cups long-grain basmati rice
  • 2 large onions, thinly sliced
  • 3 tbsp fresh ginger-garlic paste
  • 2 tsp turmeric powder
  • 2 tsp red chili powder
  • 2 medium tomatoes, diced
  • 1 cup plain yogurt
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped mint leaves
  • 2 bay leaves
  • 4 cardamom pods
  • 4 cloves
  • 1 cinnamon stick
  • Salt to taste
  • Cooking oil for frying

Instructions

  1. Marinate chicken with yogurt, ginger-garlic paste, salt, turmeric powder, red chili powder, and half of the chopped herbs. Let it rest for at least an hour.
  2. Rinse basmati rice under cold water until clear. Soak for 30 minutes; drain.
  3. In a pot, heat oil over medium heat and fry sliced onions until golden brown. Remove half for garnishing.
  4. In the same pot, add whole spices and sauté until fragrant. Add diced tomatoes and cook until soft.
  5. Stir in marinated chicken and cook uncovered until nearly done (about 10 minutes).
  6. Layer soaked rice over the chicken, add enough water to cover by an inch, season lightly with salt, and simmer covered for 20 minutes.
